Aromatic Veg Pulao

Ingredients
  

  • 1 cup Basmati rice
  • 2 tbsp Ghee or oil
  • 1 small Onion
  • 1 small Tomato
  • 1/2 cup Carrot
  • 1/2 cup Peas
  • 1/2 cup Beans
  • 1 small Potato
  • 1 tsp Ginger-garlic paste
  • 1 pc Bay leaf
  • 3-4 pcs Cloves
  • 1 pc Cinnamon stick
  • 2 pcs Cardamom
  • 1 tsp Cumin seeds
  • 1/2 tsp Garam masala
  • 2 cups water
  • to taste Salt

Equipment

  • 1 Pressure cooker or deep pan
  • 1 Knife
  • 1 Cutting Board
  • 1 Spatula
  • 1 Bowl

Method
 

  1. Wash and soak basmati rice for 20 minutes, then drain.
  2. Heat ghee or oil in a pressure cooker. Add cumin seeds, bay leaf, cloves, cinnamon, and cardamom.
  3. Add sliced onions and sauté until golden brown.
  4. Add ginger-garlic paste and tomatoes, cook until soft.
  5. Add all chopped vegetables and sauté for 2–3 minutes.
  6. Add salt, garam masala, and rice. Mix gently.
  7. Pour water and stir well.
  8. Pressure cook for 1 whistle on medium flame or cover and cook until rice is done.
  9. Let it rest for 5 minutes before fluffing with a fork.
  10. Serve hot with raita or pickle.

Notes

  • For extra flavor, add a few drops of lemon juice or fried cashews.
  • Use long-grain basmati rice for best aroma.
  • You can make it in an open pan or rice cooker too.
